Biofortification

Here is an article about biofortification of foods, the breeding or bioengineering of basic staple crops to contain higher amounts of important vitamins and minerals. The article is much fairer and more balanced than my cynical take on the issue in a satirical article I wrote about endowing humans with rumen stomachs. The author responsibly notes that the goal isn't to further enable the current lack of diet diversity that the poor suffer from, but rather that the use of biofortified crops can serve as an immediate improvement to the diet of the poor, concurrent with longer-term efforts to expand access to a more diverse diet.
